Brent has been cooking for over 40 years, starting his apprenticeship in the Australian Hotel, Castlereagh Street, Sydney.
What follows is an extensive and varied career. From The Sebel Townhouse in Elizabeth Bay, Bernards Restaurant in Crows Nest, The Royal Sydney Yacht Squadron, Pelican Beach Resort, Opal Cove in Coffs Harbour, SSS BBQ Barns, to The Powerhouse Boutique Hotel in Tamworth. Many others in between.
In the late 70s, as a family, they moved to North Dorrigo, where they bought the General Store and Post Office. After establishing this business, they built an adjoining restaurant.
